1 cup diced mango or pineapple
1 minced jalapeno pepper
1/3 cup red onion
1/2 cup red bell pepper
1 finely minced garlic clove
2 tablespoons lime juice
2 or 3 tablespoons finely chopped mint.
Salt and freshly ground pepper to taste
Combine all the ingredients in a bowl. Serve as an accompaniment to grilled fish or pork tenderloin, or as an appetizer with chips.
